Vegetarian Collard Greens Recipes

 

One of our staples during all of our holiday meals is Collard Greens.  I wanted to create a tasty vegetarian options because the holiday season would not be the same without them on my plate.  They have been endorsed from my family members from the south so you know they are good!  Enjoy!

 

1 bunch fresh collard greens
2 tablespoons extra virgin olive oil
Sea salt and pepper to taste
1 medium yellow onion, chopped
6-8 cloves of garlic, crushed
1 cup vegetable broth
Juice of 1/2 lemon
2-3 tablespoons rice wine vinegar
Pinch of cayenne pepper (optional)
1. Clean the collard greens and strip them from the stalk.
2. Stack 5 or 6 leaves on top of one another and roll them up so they look like a green cigar. Cut across the cigar to make thin strips.
3. In a large pot, over medium heat, add the olive oil, salt, pepper and chopped onions. Sauté until onions are translucent.
4. Add garlic, collard greens and vegetable broth. If you are adding cayenne pepper add it now.
5. Simmer on medium-low head for 30 minutes, stirring occasionally to make sure that the greens are cooking evenly.
6. Add lemon juice and vinegar, and cook for another 15-20 minutes or until greens are tender.

Traditional New Year’s Meal

My grandparents are from the south so for as long as can remember New Year’s Day we have the tradition of eating black-eyed peas, greens and cornbread.  Greens like  Collard greens, mustard or turnips greens to represent money or dollar bills.  Cornbread represents gold pieces.   These are dishes that I look forward to every year.  I am good at making greens and cornbread.  Black-eyed peas are one of the staples for the new year in southern tradition.  They represent good luck and prosperity in the new year.   So for as long as I can remember I have had black-eyed peas during New Year’s Day.  In fact that is one of the only times during the year I that I eat them.

For the last several years I have been trying to new recipes for black-eyed peas and I realize that I really like them and would love to incorporate them into my life.  Some of my favorite recipes have been vegan barbequed black eyed peas out of Vegan Soul Kitchen by Bryant Terry.  I also love the Black-eyed pea recipe in Marcus Samuelson’s book Soul of a New Cuisine: A Discovery of the Foods and Flavors of Africa.

So now part of my New Year’s Day is to try a black-eyed pea recipe. It allows to me be creative and adventurous in the new year.  It a great way to start the year, with healthy food that is filling and nutritious.

Day 25 – Sharing green smoothies with a friend

Today I was walking in a fundraiser with a friend.  When she came over to go i asked her if she wanted to share a green smoothie.  She was up for the challenge and we created a new balance.  We substituted collard greens for kale. We also added a squeeze of lemon and agave nectar to blend the flavors together.

 

Frozen Strawberries, avocado, banana, collard greens, agave nectar, squeeze of lemon and water.
