Are you sensitive to wheat or gluten?  Have no Fear Soba noodles are here!  I was first introduced to Soba Noodle Soup during the lunch time rush in Tokyo.  It is a favorite for lunch all over Japan. Chef Rebecca had made it into a lovely side dish or a main dish.

Soba noodles are made with Buckwheat, which is a different grain than Wheat. Buckwheat is gluten-free it doesn’t have gluten in it.  So for anyone that was avoiding all types of pasta because they need to be gluten-free this is a great substitute.  It is hardy enough to mix with vegetables, beans or meats.  It also cooks in minutes. So it is a quick way to enjoy a pasta side dish or main dish.

You can use it to replace your favorite long pasta dish.  It is a great option.  You can find Soba noodles in your local grocery stores in the international isle.  Make sure to read the label to make sure the manufacturer has not added wheat.

Costa Rican Black Bean Soup with Sweet Potato and served with Ancho Chile Relish.  These two recipes can be found in a wonderful book called The Longevity Kitchen by Whole Foods Chef Rebecca Katz.  I love this book, honestly I love all of Rebecca Katz’s books.  She teaches us to get to the Yum in foods.

The main ingredients are sweet potatoes and black beans which are both food that are great for managing stress. When you see how great they, are you will definitely want to add them to your arsenal of stress busting foods.

Sweet potatoes are considered by some to be a super food.  They are a rich source of beta carotene which is a pre-cursor to Vitamin A.  It also has a high amount of vitamin C. Both are important for wound healing and cell repair.  Sweet potatoes are categorized as anti-inflammatory, antioxidant and blood sugar balancing, which means they are good for heart health, diabetes, pre-diabetes, stress management, high cholesterol, weight loss, anxiety, depression, infertility, woman’s health issues along with a host of other health conditions.

Black beans are a fiber packed food, one cup of black beans gives you almost 15 grams of fiber.  That is almost half of your daily requirement for fiber! Black beans have benefits for anyone with digestive problems.  Black beans have a substance called butyric acid that supports digestive function. The digestive system reduces gas production that people can sometimes experience with other beans. Antioxidant and anti-inflammatory phytonutrients in black beans makes them ideal for supporting heart health and balancing blood sugar.  So in addition to helping digestive issues like IBS, gas, bloating, constipation, diarrhea, Crohn’s disease and Ulcerative colitis, it also helps heart health, high blood pressure, high cholesterol, diabetes, pre-diabetes, weight loss, cancer prevention, PCO, PCOS and women’s health issues.

Just to add a bit of Yum, Chef Rebecca Katz recommends a dollop of Ancho Chile Relish which the recipe is also in her book. Ancho Chile Relish is a wonderful compliment to anything made with black beans.

The Christmas Cookie Party Dilemma

 

Christmas Cookie Dilemma

 

On this installment of Dr. Dae’s healthy living adventures: I tackle a holiday cookie swap!  My dilemma – I love sweet treats and I’m committed to showing people how whole food eating can be delicious and simple so what type of cookie do I bring?  Holiday parties to me, mean spending time with friends and experiencing decadent foods.  During the holidays I exercise this philosophy when it comes to foods I give myself one unhealthy category to try each party and I continue to eat a clean meals the rest of the day.  This allows me to enjoy myself with beating myself up about the foods that I am eating or the beverages that I am drinking during the parties.  Eating my normal plan for all the rest of my meals allows me to stay balanced and not gain weight or feel food fatigue from all the extra decant foods available during the holiday party season.

The cookie swap party presents a special challenge for me because the purpose of the party is to go enjoy the cookies and bring several dozen cookies home to continue to eat later during the holidays.  To completely out myself I love dessert!  I always have so to be in a room of many, many, many cookies is dangerous for me.  So I have to have a game plan before I step foot into the party.  I am deciding that I will only bring home a certain amount of cookies probably no more than 2 dozen and I will share the ones I bring with the staff and my family so they will be gone in 3 days.  This way I don’t continue to eat cookies, candies, and refined sugar for the next 2 weeks.

My final dilemma what to prepare and bring to the party to share with everyone? While I am very good at cooking and creating foods recipes I am very bad at baking whole food recipes.  Baking is more like a science you can’t just throw things together and expect to make perfect cookies, too much liquid can make a cookie mess.  Since whole foods baking is not one of my strength’s I don’t have go to recipes that I know people will like.  I have also noticed that some healthy cookies require ingredients that are hard to find and require a lot of work.  My goal is to make whole food cooking accessible and easy for me and all the people I share it with.  So when in doubt I go to of my favorite award winning book The Cancer-Fighting Kitchen by my friend, Rebecca Katz.  It is a great book that has yummy recipes that oh by the way, happen to be delicious too!  I found  Wendy’s Date Nut Truffles, truffle made with dark chocolate and almonds two of my favorite combinations.  Chocolate is almost always a hit so I went for this simple recipe and it taste delightful.  The truffles were chewy and soft with a lovely chocolate taste.

The truffles were a hit!  People loved them.  Two people told me that they loved dates so they were interested in the recipe.  In fact the truffles won the most creative cookie award against some stiff competition of chocolate salty caramel cookies and the most popular Snicker doodle.

There were many yummy choices but I stuck to my plan about how many cookies to bring home. I shared them and I finished them today 3 days after the party. My idea to bring a healthy and yummy treat worked like a charm and I got to have a wonderful holiday experience.  Happy holidays!
